Today’s recipe is karaage bento. Kara-age is Japanese style fried chicken, and this is one of the most popular dishes in Japan. Many of my friends say this is their favorite dish, and I’m sure you’ll love it too. Aside from the actual cooking time, You will need 30mins to marinate the chicken , so if you don’t have that much time in the morning, you could prepare it in the night before, let it marinate overnight and deepfry it in the morning.

Karaage Bento Recipe

Ingredients (2 servings)

chicken thigh : 250g
sake : 2tsp
soy sauce : 1TBSP
grated ginger : 1tsp
grated garlic : 1tsp
potato starch : 2TBSP
flour : 2TBSP
egg : 2
salt and pepper
olive oil

For the chicken thighs, you could substitute it with chicken breast, but thighs will make much juicier karaages. In this video we are using precut chicken thighs.

Karaage (Japanese Fried Chicken)
1. Mix together soy sauce, sake, grated garlic, and grated ginger in a cup to make the marinade.
2. Put the chicken in a ziploc bag, and pour in the marinade. seal the ziploc and massage the bag to mix together the contents well. Then put it in the fridge for 30mins. If youre doing this part at night for the next morning, don’t leave it for more than 12hours.
3. 30mins later, pour in enough oil into a fry pot and put it on medium high heat until the oil temperature reaches 170c / 340f. While you wait, take out the chicken out of the ziploc onto a tray and spread them out so they don’t overlap. Don’t pour in the remaining marinade here, we don’t want any extra liquids. Mix together the flour and the potato starch, and sprinkle half of it on the chicken. Turn the over the chicken and sprinkle the rest of the mixture, and make sure all sides of each piece are covered.
4. When the oil is at 170c, carefully insert the chicken one by one into the pot and deep fry for 3-4 mins until theyre golden brown. When theyre done, take them out onto a tray to drain the excess oil.
Scrambled Eggs
1. Break two eggs in a cup
2. Mix well
4. Add in salt and pepper if you like
5. Put a pan on middium heat, and heat about a tbsp of olive oil
6. pour in the eggs, and gently stir until its hard enough
